Beans turning in the roasting drum

One drum, one person watching it.

Everything is roasted on a twelve kilo drum in the arch. Small batches mean we can stop a roast on the day it tastes right rather than on a schedule.

Bags are filled the morning they ship, and the roast date is printed on every one.

Getting the best from it

Filter

Sixty grams per litre, water just off the boil, poured in three stages.

3 minutes

Espresso

Eighteen in, thirty six out. Start there and adjust the grind, not the dose.

28 seconds

Cafetiere

Coarse grind, four minutes, break the crust and skim before pouring.

4 minutes
